Spinach Artichoke Dip

Always a crowd favorite, and packed with so many vitamins, minerals and has a decent amount of protein too! This dip is so versatile and can be used in numerous ways- just this week we had it stuffed in chicken, I put it on toast with eggs over easy, and we used it as a sauce for pizza! Truly the recipes are endless! 
Course Appetizer

Ingredients
  

  • 1 yellow onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 5 oz spinach, roughly chopped
  • 2 cans quartered artichokes, roughly chopped
  • 16 oz cottage cheese Good Culture
  • 1 cup Monterey Jack Cheese
  • salt, pepper, and garlic

Instructions
 

  • Sauté the onion and garlic until tender.
  • Add the artichokes and sauté 5 minutes.
  • Add in the spinach, and cook until slightly wilted.
  • Stir in the cottage cheese an shredded cheese.
  • Stir until well combined and hot!
  • Pour into serving dish and top with cheese

Notes

You can use cream cheese instead of cottage cheese if you prefer- cream cheese is the OG recipe and gives an extra creamy texture. I did cottage cheese to bump up the protein!
