Spinach Artichoke Dip
Always a crowd favorite, and packed with so many vitamins, minerals and has a decent amount of protein too! This dip is so versatile and can be used in numerous ways- just this week we had it stuffed in chicken, I put it on toast with eggs over easy, and we used it as a sauce for pizza! Truly the recipes are endless!
Ingredients
- 1 yellow onion, diced
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 5 oz spinach, roughly chopped
- 2 cans quartered artichokes, roughly chopped
- 16 oz cottage cheese Good Culture
- 1 cup Monterey Jack Cheese
- salt, pepper, and garlic
Instructions
- Sauté the onion and garlic until tender.
- Add the artichokes and sauté 5 minutes.
- Add in the spinach, and cook until slightly wilted.
- Stir in the cottage cheese an shredded cheese.
- Stir until well combined and hot!
- Pour into serving dish and top with cheese
Notes
You can use cream cheese instead of cottage cheese if you prefer- cream cheese is the OG recipe and gives an extra creamy texture. I did cottage cheese to bump up the protein!
