Loaded Bean Dip

The absolute perfect superbowl app that is still delish, but packed with protein to support your blood sugar! 
There is about 25 grams of protein in 1 serving!
Course Appetizer, Side Dish, Snack

Ingredients
  

  • 1 lb ground beef
  • 1 can refried black beans I used Siete Foods
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 can diced green chilis (hot)
  • 16 oz cottage cheese, blended Good Culture
  • 3/4 pack taco seasoning Siete Food Hot Taco Seasoning
  • 1/2 cup Monterey Jack cheese
  • cilantro and jalapeño for garnish

Instructions
 

  • Brown meat in large saucepan.
  • After it is mostly cooked, add bell peppers and green chilis, cook until tender.
  • Add the taco seasoning.
  • Add refried black beans. After is has warmed and combined with the meat, pour in the blended cottage cheese.
  • Transfer to an oven safe dish, top with cheese and broil for a few minutes or until warm and bubbly!
  • Serve with your favorite tortilla chips.
