Pumpkin Chocolate Chip Muffins
- 2 cups kodiak cakes (original buttermilk or cinnamon oat)
- 1 cup pumpkin
- 2 eggs
- 1 cup silk ultra almond milk (I used unsweetened)
- 1 tsp vanilla
- 1/2-1 tsp cinnamon
- 1/4 tsp nutmeg
- 2 tsp maple syrup
- Combine all ingredients in a large bowl.
- Bake at 350 for 15-18 minutes or until cooked throughout.
- Store in an airtight container for up to a week. Reheat in the microwave for 10-15 seconds to have a warm and melty muffin.
