Pumpkin Chocolate Chip Muffins

Ingredients
  

  • 2 cups kodiak cakes (original buttermilk or cinnamon oat)
  • 1 cup pumpkin
  • 2 eggs
  • 1 cup silk ultra almond milk (I used unsweetened)
  • 1 tsp vanilla
  • 1/2-1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 2 tsp maple syrup

Instructions
 

  • Combine all ingredients in a large bowl.
  • Bake at 350 for 15-18 minutes or until cooked throughout.
  • Store in an airtight container for up to a week. Reheat in the microwave for 10-15 seconds to have a warm and melty muffin.
