Fall Harvest Pasta
I’ve loved the Trader Joes fall harvest pasta sauce for a longgggg time but it always felt like it was missing a little something. This is the best and easiest way to add a little bit more to an already great sauce!
Ingredients
- 1 large shallot, chopped
- 2 large cloves garlic, chopped
- 1/4 cup sundried tomatoes, chopped
- 2 tbsp sage, chopped (about 4-5 whole leaves)
- 1 bag fresh spinach
- 1 tbsp red pepper flakes
- salt and pepper
- 1 lb ground Italian sausage, cooked
- 2 boxes Banza rigatoni (preserve a little bit of the cooking water when draining)
- Fresh parmesan to top it!
Instructions
- Cook the sausage, transfer to a bowl. (I put paper towels on the bottom to absorb some grease)
- In the same pan, add shallots and garlic. Cook for 1-3 minutes. Add Sundried tomatoes and sage. Cook until tender.
- Add spinach and cook until it begins to wilt.
- Add sauce and sausage. After you stir add the pasta + 1/2 cup of the pasta water. Add red pepper flakes if you desire more spice.
- Stir until well combined.
- Top with parmesan cheese before serving!
