Stuffed Pepper Soup
The coziest soup on a cold, snowy winter day! I have made this a few times this winter and it is the easiest, one pot soup ever!
Ingredients
- 1 lb Ground turkey
- 1 Yellow onion, chopped
- 2 cloves Garlic, minced
- 1 Red bell pepper, chopped
- 2 Green bell peppers, chopped
- 2 heaping cups Finely chopped kale
- 1 can Tomato sauce
- 1 can Fire roasted tomatoes, diced
- 2 16.9 ounce Beef bone broth
- 1 package Trader Joes frozen rice (2 cup)
- Salt, pepper, and garlic
- Italian seasoning
- Red pepper flakes
- Parmesan cheese
Instructions
- Cook ground turkey in a large dutch oven/ sauce pan.
- Chop the veggies (I used my veggie chopper on the larger setting).
- After the turkey is cooked, add the peppers, onions and garlic. Cover and let cook 5-10 minutes.
- Add the bone broth, fire roasted tomatoes, and tomato sauce. Stir. Season generously! I did salt, pepper, garlic, red pepper flakes, and a little bit of an Italian seasoning blend. Taste it and continue to season until desired flavor is achieved. Cover and let simmer for 15-20 minutes or until flavors combine.
- Add the chopped kale and rice. Let simmer until kale is wilted and rice is ready (note I used pre cooked rice from trader joes so it just needed to be warmed).
- Top with parmesan cheese and enjoy!
