Cranberry Pecan Brussel Spout Salad
A twist on a fall harvest salad. The perfect side dish for Thanksgiving!
Ingredients
For the salad
- 5 cups shaved Brussel Sprouts
- 1 cup honey crisp apple
- 1 cup candied pecans, chopped Trader Joe's are the best
- 1/2 cup unsweetened cranberries
- 1 cup grated parmesan cheese
For the dressing
- 1/3 cup olive oil
- 1-2 tbsp maple syrup
- 2 tbsp dijon mustard
- 1-2 cloves garlic or garlic powder
- 2 tbsp apple cider vinegar
- salt and pepper to taste
Instructions
- Mix all ingredients in a bowl and serve immediately! Hope you enjoy this dish!
- *Does not keep well overnight so it’s recommended to wait to add the dressing until you are ready to serve!
