QUINOA SHRIMP SALAD WITH AVOCADO MANGO SALSA

A salad loaded with nutrients, flavor and balanced with protein, fat, carbs and fiber!! Not to mention it is soooo refreshing. Deets 👇

Ingredients
  

AVOCADO MANGO SALSA:

  • 2 cups fresh mango chopped
  • 1 red bell pepper chopped
  • 1-2 avocados chopped
  • 1/2 red onion chopped
  • 1/4 cup cilantro chopped
  • Juice from 2 limes
  • 1 tsp fresh jalapeño chopped

CILANTRO LIME VINAIGRETTE

  • 1/2 cup olive oil
  • 2 limes
  • 1/2 bunch cilantro
  • 1 garlic clove
  • 1 tbsp honey

SALAD INGREDIENTS

  • Spring mix, roughly chopped 
  • Arugula, roughly chopped 
  • Quinoa, prepared and chilled
  •  Grilled wild caught shrimp, seasoned in melted butter, Salt Sisters (Allie10 for discount) mojo seasoning, garlic powder and chili powder

Instructions
 

AVOCADO MANGO SALSA

  • Add all ingredients to a large bowl and stir until well combined. Makes enough for about 4 salads.

CILANTRO LIME VINAIGRETTE

  • Add all ingredients to blender and pulse well combined. Makes enough for about 4 salads.

SALAD

  • Toss the greens in the cilantro lime dressing and then assemble the greens into a serving bowl. Add 2 large spoonfuls of the mango salsa, ⅓  cup of quinoa, and the grilled shrimp!
