
QUINOA SHRIMP SALAD WITH AVOCADO MANGO SALSA

Ingredients
AVOCADO MANGO SALSA:
- 2 cups fresh mango chopped
- 1 red bell pepper chopped
- 1-2 avocados chopped
- 1/2 red onion chopped
- 1/4 cup cilantro chopped
- Juice from 2 limes
- 1 tsp fresh jalapeño chopped
CILANTRO LIME VINAIGRETTE
- 1/2 cup olive oil
- 2 limes
- 1/2 bunch cilantro
- 1 garlic clove
- 1 tbsp honey
SALAD INGREDIENTS
- Spring mix, roughly choppedÂ
- Arugula, roughly choppedÂ
- Quinoa, prepared and chilled
- Â Grilled wild caught shrimp, seasoned in melted butter, Salt Sisters (Allie10 for discount) mojo seasoning, garlic powder and chili powder
Instructions
AVOCADO MANGO SALSA
- Add all ingredients to a large bowl and stir until well combined. Makes enough for about 4 salads.
CILANTRO LIME VINAIGRETTE
- Add all ingredients to blender and pulse well combined. Makes enough for about 4 salads.
SALAD
- Toss the greens in the cilantro lime dressing and then assemble the greens into a serving bowl. Add 2 large spoonfuls of the mango salsa, â…“Â cup of quinoa, and the grilled shrimp!
