Kale Pesto Panini



  • 1 cup kale
  • 1 tbsp olive oil
  • 2 tbsp parmesan
  • 1 large clove garlic
  • juice from half a lemon

Sandwich toppings

  • 1/2 red bell pepper, sautéed
  • deli turkey
  • muenster cheese
  • 2 slices @farmtomarket sourdough


  • Massage and then sauté kale in saucepan until barely wilted.
  • Add kale, parmesan, olive oil and lemon to blender.
  • Blend/ pulse until broken up and “paste like”.
  • Sauté the peppers until soft.
  • Spread the kale on both sides of the bread. Top with turkey, cheese, bell peppers.
  • Cook until cheese is melted and it’s golden brown!
