Cilantro Lime Salad with Black Bean Corn Salsa

Ingredients
  

Black Bean Corn Salsa

  • 1 can black beans
  • 1 can corn
  • 1/4 tsp cumin
  • 1/4 tsp garlic powder
  • 1/4 tsp smoke paprika
  • 1/4 large red onion, chopped
  • juice from 1 lime

Cilantro Lime Dressing

  • 1/4 cup olive oil
  • 1 garlic clove
  • juice from 2 limes
  • 1 tbsp honey
  • 2 tbsp greek yogurt
  • 1 heaping cup cilantro
  • Trader Joe's chili lime seasoning (few dashes)

Instructions
 

  • Combine black bean corn salsa ingredients. Best if sets overnight to let flavors combine.
  • All all cilantro lime dressing ingredients to a blender, pulse until well combined
  • For the salad I did a blend of chopped kale and arugula. Toss the lettuce in the dressing and let set for at least 5-10 minutes. I topped it with chopped bell peppers, blackened chicken, avocado and white cheddar cheese.
