High Protein Egg Salad
Elevating your egg salad and adding so much more protein than your traditional egg salad! The perfect summer snack, breakfast, or side dish for a cook out.
- 8 hard boiled eggs, chopped
- 1 cup cottage cheese Good Culture
- 1 large celery stalk, diced small
- 2 radishes, diced small
- 1-2 tsp dijon mustard
- 1-2 tsp honey mustard
- 1/2 tsp dried dill weed
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- If you want hard boil your eggs in an instant pot follow these directions. Put them in the instapot over a little bit of water. Let it raise to pressure, 5 minutes at pressure, let them rest for 5 minutes before venting, followed by a 5 minute ice bath! They peel perfectly every time!
