Garlic Sriracha Salmon Bowls
This bowl is so easy, refreshing and packed with flavor, protein, color and fiber! Great option to make ahead for lunches for the week.
Ingredients
- 1, 3-4 oz salmon filet
- 1/2 cup cooked jasmine rice
- 1/2 cup red cabbage, chopped
- 1/4 cup edamame, prepared (bought frozen and heated in microwave)
- 1/4 cup mango, diced
- 1/4 cup cucumber, thinly sliced
- 1/2 avocado, sliced
- garlic sriracha seasoning Weber brand
- 1/8 cup spicy cashews
- spicy mayo
- sriracha
Instructions
- Coat salmon in the garlic sriracha seasoning. Cook in air-fryer on 400 for 12-15 minutes or until done (will vary depending on size of fish)
- To make the cashews, spray with avocado oil, drizzle with honey and garlic sriracha seasoning and bake at 350 for 8-10 minutes
- Assemble bowl with remaining ingredients, and top with spicy mayo! (We just mixed mayo + sriracha to make our own, about 1/4 cup mayo to 1 T sriracha)
