Chewy Chocolate Pumpkin Bites

Ingredients
  

  • 1.5 cups blended old fashioned oats
  • 1 tsp cinnamon
  • 1/2 tsp baking soda
  • 1 1/4 tsp baking powder
  • 1/4 tsp salt
  • 1 tbsp flax seed
  • 1 large egg
  • 1 tsp vanilla extract
  • 1.5 cups lightly packaged grated zucchini (I used a cheese grater)
  • 1/2 cup plain or vanilla greek yogurt
  • 1/3 cup coconut oil (measured when melted)
  • 1/2 can pumpkin
  • 1/4 cup, 2 tbsp organic coconut palm sugar
  • 1 tbsp unsweetened cocoa powder
  • 1/2 cup dark chocolate chips

Instructions
 

  • Bake at 350 for 14-17 minutes! Best if served warm. Store in the refrigerator and heat up in microwave for 10 seconds to warm.
