Thai Chicken Pepper Bowls

I always get stuck in my rut doing the same meals so I thought it was time to mix it up! Thai chicken pizza is one of my favs, so I recreated it into a bowl! It’s packed with veggies, flavor and is so easy!

  • 1 large green pepper, diced
  • 2 lbs chicken
  • 1 package mushrooms, sliced
  • 2 cups carrots, shredded
  • 1/2 bag shredded green cabbage
  • 4 green onions, diced
  • 1/2 cup Thai peanut sauce Tsang Bangkok is my fav
  • 1/4 cup chopped cilantro
  • 1 3/4 cup Israeli couscous, dry
  • olive oil
  • sriracha optional


  • Marinate chicken in additional Thai sauce and cook. I did mine in the air fryer!
  • In a large pan, heat olive oil. Add shredded carrots, green bell pepper, cabbage, mushrooms and the whites of the green onions. Cook until slightly tender. Add Thai sauce.
  • Prepare the couscous according to package.
  • Combine couscous with carrot & mushrooms mixture. Add the chicken.
  • Stir in cilantro.
  • Top with green onions or chives and enjoy! Add a little bit of sriracha if you like spice!
