Parmesan Chickpea Brussel Sprouts

  • 1 lb brussel sprouts, chopped
  • 1 can chickpeas, drained and rinsed
  • 2 tbsp dijon mustard
  • 2 tbsp mayo
  • 2 tbsp honey
  • salt, pepper, garlic
  • parmesan cheese
  • ground mustard seed


  • Chop or shred brussel sprouts.
  • To a small dish, add mustard, mayo, honey, salt, pepper, and garlic.
  • Spread brussel sprouts over a baking sheet, pour sauce over and stir until well combined.
  • Top with parmesan cheese, stir to combine.
  • Bake at 350 °F for 35-40 minutes or until brussels are done and slightly crisp.
  • Top with ground mustard seed and more parmesan if desired.
