Parmesan Chickpea Brussel Sprouts
Ingredients
- 1 lb brussel sprouts, chopped
- 1 can chickpeas, drained and rinsed
- 2 tbsp dijon mustard
- 2 tbsp mayo
- 2 tbsp honey
- salt, pepper, garlic
- parmesan cheese
- ground mustard seed
Instructions
- Chop or shred brussel sprouts.
- To a small dish, add mustard, mayo, honey, salt, pepper, and garlic.
- Spread brussel sprouts over a baking sheet, pour sauce over and stir until well combined.
- Top with parmesan cheese, stir to combine.
- Bake at 350 °F for 35-40 minutes or until brussels are done and slightly crisp.
- Top with ground mustard seed and more parmesan if desired.
