Kale Caesar Salad
Ingredients
Dressing
- 1/4 cup greek yogurt
- 1/8 cup olive oil
- 2 large cloves garlic, finely chopped
- 1/2-1 tbsp dijon mustard
- 1 egg yolk
- 1/2 lemon, juiced
- generous amount ground pepper
- salt
- parmesan
- dash of agave
- smoke paprika
For salad
- chopped kale
- fresh parmesan
- blackened chicken
- parmesan crisps crumbled up or croutons
Instructions
- Massage your kale. This helps to break down the fiber, and make it softer to eat! This makes it taste way better and actually makes it easier to digest
- Blend or mix all ingredients for dressing together
- Mix all the ingredients up for the salad, toss the salad with dressing and let it sit for 10 minutes prior to eating it. Add the blackened chicken to top.
