Dijon Mustard Potato Salad
Delicious and flavorful side dish with blood sugar and gut benefits!
Ingredients
- 9 potatoes (yukon gold), boiled and then cooled and cubed
- 2 celery stalks, chopped
- 2 green onions, chopped
- 1/2 cup dijon mustard This gives it a kick! You can do half dijon and half normal or honey mustard for a sweeter flavor
- 1/4 cup mayo
- 4 hard boiled eggs, chopped
- 1 tbsp apple cider vinegar
- 1 tsp garlic
- tiny bit of agave nectar optional
- salt and pepper
