Chipotle Chickpea Tacos


  • 1 can chickpeas, drained and rinsed
  • 1-2 cups chopped kale
  • 1 red bell pepper, chopped
  • 1 tbsp siete taco seasoning
  • 1/2 tbsp trader joe's chili lime
  • fresh lime juice (optional)
  • pickled planet l-boost herbal kraut
  • herdez chipotle salsa cremosa
  • cotija cheese
  • corn tortillas


  • Sauté the bell peppers and kale in the seasonings with olive oil until soft.
  • Add the chickpeas, sauté 3-5 minutes until sizzling.
  • Heat up the corn tortillas in the microwave and fill with chickpea mixture.
  • Top with the salsa, I-boost herbal kraut, and cotija cheese!
