Chipotle Chickpea Tacos
- 1 can chickpeas, drained and rinsed
- 1-2 cups chopped kale
- 1 red bell pepper, chopped
- 1 tbsp siete taco seasoning
- 1/2 tbsp trader joe's chili lime
- fresh lime juice (optional)
- pickled planet l-boost herbal kraut
- herdez chipotle salsa cremosa
- cotija cheese
- corn tortillas
- Sauté the bell peppers and kale in the seasonings with olive oil until soft.
- Add the chickpeas, sauté 3-5 minutes until sizzling.
- Heat up the corn tortillas in the microwave and fill with chickpea mixture.
- Top with the salsa, I-boost herbal kraut, and cotija cheese!
