Cajun Chicken Pasta

Ingredients
- 1 yellow onion chopped
- 1 red bell pepper diced
- 1 clove garlic minced
- 3 roma tomatoes chopped
- 1 tbsp butter or olive oil
- 1.5 lb chicken seasoned with Cajun seasoning
- 1 package cream cheese
- 1 heaping tbsp Cajun seasoning adjust based on spice preference
- 1 bag spinach
- 8 oz penne pasta prepared according to package instructions (don't forget to salt the water)
- ½ cup pasta water reserved from boiling
Instructions
- Cook the Chicken: Season the chicken with additional Cajun seasoning. Cook until done (you can use an air fryer, pan, or oven). Once cooked, set aside.
- Sauté the Vegetables: In a large saucepan, heat butter or oil over medium heat. Add the onion, bell pepper, tomatoes, and garlic. Sauté for 3-5 minutes until soft and fragrant.
- Add the Seasoning: Stir in the Cajun seasoning and cook for another 5-10 minutes to let the spices meld with the vegetables.
- Cream Cheese & Spinach: Add the cream cheese and spinach to the pan. Cover the pan for a few minutes to allow the spinach to wilt.
- Combine Ingredients: Stir everything together, adding the cooked chicken and about ½ cup of pasta water to loosen the sauce.
- Mix in the Pasta: Finally, add the cooked penne to the pan and stir until everything is evenly coated with the sauce. Serve hot and enjoy!
