Buffalo Cauli Bowls

This bowl is hearty but completely nourishing. Loaded bowls are my fav way to pack in veggies, nutrients, fiber and protein all in one! This meal will be ready in less than 20 minutes, and a really easy clean up!

Ingredients
  

  • 1 package ground chicken
  • 1 yellow onion, diced
  • 4 stalks celery, chopped
  • 2 tbsp ranch seasoning Trader Joe's
  • 1 bag frozen riced cauliflower
  • 1 cup rice, prepared cook in bone broth for even more protein and gut loving benefits
  • 1/3 cup Buffalo Sauce Primal Kitchen
  • 1/2 cup Colby and Monterey Jack Cheese
  • 1/4 cup cottage cheese or cream cheese

Instructions
 

  • Add olive oil, celery and onion to medium saucepan. Sauté for 3-5 minutes or until slightly tender. Add ground chicken. 
  • Once the ground chicken is about halfway cooked, add frozen riced cauliflower and ranch seasoning. 
  • Once chicken is fully cooked add the rice and buffalo sauce, stir well. 
  • Add cheese and cottage cheese, stir and heat until both are melted. 
  • Serve in a bowl and enjoy!
