Ingredients

  • 1 lb turkey sausage
  • 1 yellow onion diced
  • 1 red bell pepper diced
  • 1 green bell pepper diced
  • 1 medium sweet potato chopped
  • 1 cup quinoa prepared according to the package
  • 1 packet of siete spicy taco seasoning or mild if you want less spice
  • 1 can of black beans drained and rinsed
  • 2 Eggs

Instructions

  • Cook the sausage: In a large skillet over medium heat, add the turkey sausage. Cook, breaking it apart with a spatula, until it’s browned and cooked through about 5-7 minutes.
  • Cook the sweet potato: Place chopped sweet potato in the microwave for 2-3 minutes or until tender
  • Sauté the vegetables: Add the sweet potato, diced yellow onion, red bell pepper, and green bell pepper to the skillet. Sauté for about 5 minutes, or until the vegetables are tender.
  • Add quinoa and seasoning: Stir in the prepared quinoa and the packet of Siete spicy taco seasoning (or mild, if preferred). Mix well to combine all the ingredients.
  • Incorporate black beans: Add the drained and rinsed black beans to the skillet. Stir gently to combine and heat through for about 2-3 minutes.
  • Serve: Once everything is heated through, remove from heat and serve with eggs on top, prepared to your liking—I prefer mine over easy (cooked on medium for about 4 minutes).
  • Garnish: Add fresh cilantro and cotija cheese if desired. I also like to drizzle a bit of Cholula green pepper hot sauce for extra flavor and spice.
