Cook the sausage: In a large skillet over medium heat, add the turkey sausage. Cook, breaking it apart with a spatula, until it’s browned and cooked through about 5-7 minutes.
Cook the sweet potato: Place chopped sweet potato in the microwave for 2-3 minutes or until tender
Sauté the vegetables: Add the sweet potato, diced yellow onion, red bell pepper, and green bell pepper to the skillet. Sauté for about 5 minutes, or until the vegetables are tender.
Add quinoa and seasoning: Stir in the prepared quinoa and the packet of Siete spicy taco seasoning (or mild, if preferred). Mix well to combine all the ingredients.
Incorporate black beans: Add the drained and rinsed black beans to the skillet. Stir gently to combine and heat through for about 2-3 minutes.
Serve: Once everything is heated through, remove from heat and serve with eggs on top, prepared to your liking—I prefer mine over easy (cooked on medium for about 4 minutes).
Garnish: Add fresh cilantro and cotija cheese if desired. I also like to drizzle a bit of Cholula green pepper hot sauce for extra flavor and spice.
