CAJUN CHICKEN PASTA
The best meal prep breakfast that is packed with protein, flavor and so easy to make!
- 1 yellow onion chopped
- 1 red bell pepper diced
- 1 clove garlic minced
- 3 roma tomatoes chopped
- 1 T butter or olive oil
- 1.5 lb of raw chicken seasoned with cajun seasoning
- 1 package cream cheese
- 1 heaping cajun seasoning more or less depending on spice preference
- 1 bag of spinach
- 8 oz bag of penne pasta prepared according to package (make sure to salt the water)
- 1 Pasta water from boiling
Season the chicken with additional cajun seasoning and cook (I did mine in the air fryer)
In a large saucepan, add oil, onion, bell pepper, tomato and garlic. Sauté for 3-5 minutes
Add cajun seasoning and sauté for an additional 5-10 minutes
Add in the cream cheese and spinach. Cover so the spinach will wilt
Give it a stir and add the chicken and pasta water (I add about 1/2 cup)
Add the noodles and stir until well combined
