Veggie Protein Scramble

A delicious breakfast scramble for your lazy Saturday morning. This dish is also great meal prepped and reheated throughout the week to start your day off right. Full of color, veggies, protein, fat and fiber.
Course Breakfast

Ingredients
  

  • 1 medium sweet potato, sliced and then halved
  • 1/2 yellow onion, diced
  • 1 cup shaved brussels sprouts
  • 1/2 green bell pepper, chopped
  • 1/2 red bell pepper, chopped
  • 1 heaping handful kale
  • 4 eggs
  • 1/3 cup cottage cheese (2% or full fat)
  • feta or goat cheese
  • green hot sauce from Trader Joes optional

Instructions
 

  • In a large saucepan, add olive oil, onions and bell peppers 
  • Heat the chopped sweet potatoes on the microwave for about 2-3 minutes or until soft. Do the same with the Brussels sprouts 
  • Add the sweet potatoes and Brussels sprouts to the sauce pan and add in the kale. Add salt, pepper and garlic powder. Let simmer until soft
  • Add in the eggs and cottage cheese, cook until done 
  • Pour into serving dish and top with feta or goat cheese and your fav hot sauce!
